Red Velvet Cookies


My obsession with red velvet goes back to one specific moment.........when I was leafing through one of my favorite magazines and a cookie recipe stopped me cold.

Red velvet cookies?  Cream cheese frosting?

Yes and yes.

Made them.  Loved them.  And now they are a yearly Christmas tradition..........


 Red Velvet Cookies
(Country Home Magazine ~ Dec. 2008)

2 1/2 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1 1/4 tsp. baking soda
3/4 tsp. salt
1/2 tsp. ground cinnamon
1 cup unsalted butter (softened)
1 cup granulated sugar
1/3 cup packed brown sugar
2 eggs
1 1 oz. bottle of red food coloring
1 tsp. vanilla
1/2 tsp. lemon juice

In a medium bowl, combine all dry ingredients.  Set aside.  In a large bowl, beat the butter until light and fluffy.  Mix in the sugars until smooth.  Next, stir in the eggs, food coloring, vanilla, and lemon juice.  Slowly add the dry ingredients, mixing well.  Using a tablespoon, place scoops of dough on an ungreased cookie sheet.  In a preheated oven, bake for 10 to 12 minutes at 350 degrees.  Allow cookies to cool on a wire rack.  Top with cream cheese frosting.

    These will go down a treat with the boy! I've been trawling the internet for red velvet recipes (i made a red velvet cheesecake swirl brownie - disaster!!!) Hopefully these will be sooo much better!
